Charlie's "Number Two"

Charlie's "Number Two" Chili is a piquant blend of sausages,
tomatoes, onions, peppers, beans, herbs, and spices. While lacking the
whole grain goodness of, say, Shredded Wheat, this chili reaches out to
the palate and says, "taste me, love me, eat me." Although
the recipe is not a secret, it is difficult to get, as I made it up as
I went along. Below is my best recollection of what actually went into
that crockpot. Enjoy! |

Ingredients: |
|
1# Bob Evans Sweet Italian Sausage |
|
1# Bob Evans Hot Spicy Sausage [or whatever the real name is] |
|
1 medium onion, chopped |
|
3 cans (12oz?) chopped tomatoes with green chiles |
|
1 1/2 big cans (50oz?) Bush's Hot Chili Beans |
|
1/2 bottle Beer [sorry, you'll just have to drink the rest while you
cook!] |
|
|
Spices (to taste): |
|
3T Chili Powder |
|
1t Beau Monde (or Celery Salt) |
|
1T Garlic Salt |
|
2T chopped Cilantro |
|
1/2 T coarsely ground Coriander |
|
4 dashes Red Hot or Tobasco sauce |
|
|
Directions: |
|
Brown Sausage meat together in skillet; remove to crock pot. |
|
Sauté onion in sausage grease, add to crock pot. |
|
Add everything else in there. |
|
Stir, Simmer, Taste, Enjoy! |
